    Ingredients

    • 8 ounces wide rice noodles
    • 3 tablespoons sesame or extra virgin olive oil
    • 1/4 cup, plus 1 tablespoon honey
    • 1/2 cup raw peanuts
    • 2 tablespoons raw sesame seeds
    • 1/2 teaspoon chili flakes (use more or less to your taste )
    • 1 pound boneless skinless chicken thighs or breasts, thinly sliced
    • 1/2 cup low sodium soy sauce or tamari
    • 1 tablespoon fish sauce
    • 2-3 tablespoons Thai red curry paste
    • 1 tablespoon ketchup
    • 4 cloves garlic, minced or grated
    • 1 inch fresh ginger, grated
    • 1 zucchini or yellow summer squash, thinly sliced
    • 2 red or orange bell peppers, thinly sliced
    • 1 cup fresh Thai or regular basil, roughly torn
    • 1/3 cup fresh cilantro, roughly chopped
